Typical local dishes
Pasta dishes: tortellini, tortelloni, tagliatelle, lasagne, all made
from handmade pasta wqith tasty sauces made from meat, mushrooms,
ricotta and spinach. All eaten with a fine dusting of Parmigiano
Reggiano, parmesan the king of cheeses and pillar of local produce, or
you can have a sprinkling of the delicate truffle.
Meat dishes include barbecued pork or
steamed pork with polenta plus a
huge range of procured meats, salamis and the famous parma ham,
pancetta and others.
Not to forget other typical local produce
such as chestnuts and
potatoes.
There are of course the great Emilian
specialities crescentine and
tigelle kinds of breads served with cold meats, pickles and cheeses.
Another dish is borlengo typical of Passo
della Brasa, this consists of
a batter which you eat with garlic, lard and pancetta.
The wines of Colli Bolognesi
The most western parts of the Lavino and
Samoggia valleys, with Monte
S.Pietro and Monteveglio, have particularly favourable conditions for
wine production. They produce D.O.C.wines such as the renamed whites
Pinot, Riesling and Bianco of the Colli Bolognesi and the reds Barbera,
Sauvignon and Merlot. There is also a wonderful local sparkling wine
Pignoletto, with a delicate perfume and wonderfully dry taste.
